Lime Marmalade Smoked TroutSmoked Trout with a Lime Marmalade and Honey Glace. Split trout and remove back bone. Sprinkle liberally with salt and a little brown sugar, leave overnight. Buy a good quality lime marmalade and to your own taste add liquid honey, this will make a glaze on top of the flesh. Spread evenly over the flesh of the trout and smoke. For best results smoke slowly.
