Trout Roe CavierHave you ever felt guilty about cutting open a Hen and seeing all those eggs!! Try this and appease your conscience.
Using a teaspoon very carefully scrape out the egg sack. Once you get good at this the eggs will come out individually.
Add the eggs to a strong solution of salt and water, stir and leave to soak for one hour.
Drain and add a squeeze of lime juice and a good grind of black pepper.
Serve with cream cheese and Bruschetta.
