Trout with Ginger, Lime and Saffron sauce

Trout with Ginger, Lime and Saffron sauce You will need.
1 Good Trout Filleted
10 Saffron Threads
Juice of 1 lime
Juice of 1 Orange.
2 cups of GOOD white wine.
2 Tsp of honey
1 Tsp grated fresh Ginger.

Bring the Wine and juice of Lime and Orange together then drop to a simmer and add the rest of the ingrediants.Reduce by two thirds or untill sauce has thickened.
Pan fry trout with butter, give a good grind of pepper and salt.
remove Trout to a plate and drizzle with sauce.
I served this with Roasted Yams, Broccoli and Carrots with a Hollandaise sauce.
