This is what started the production of rubs for me. My girls would not eat chicken and so I decided to play with flavors. This is what I came up with!
Our chicken rub is gluten free and like the Colonel has it’s own secret ingredients.
One of my favorite meals is chicken wraps. I cut chicken breast into 1 cm lengths. I marinate these for a few hours in the rub, with a little olive oil. I then fry these until tender and moist. Lay on wraps with fresh lettuce, tomato and Avocado. Drizzle with a home made sour cream and Satay sauce dressing. Simple and made very quickly.
The girls love chunky style potatoes, (1.5 cm dice) Par-boiled, drained, and well tossed in olive oil. Sprinkle liberally with Chicken Rub then place into a HOT Roasting pan in a fan forced oven at 200 deg C for 10 minutes. Bring out, shake then place back into oven for a further 25 minutes at 180 Deg C, or nice and crispy. These are YUM!!
