This is my favorite Rub and is a little bit “Posh”.
I started using Juniper Berries while working as a chef in the UK. The restaurant that we ran was big into game meats; Juniper Berries where a popular choice when it came to venison. Juniper imparts a wonderful flavor when it comes to red meats and so this is the King of peppercorn Steak Rubs. The mellow flavor of green and red peppercorns work perfectly with the stronger black peppercorns to balance out this mix and make it quite exotic to the taste and smell. You will be amazed at the aroma of this blend.
For pepper steaks I apply liberally or sparingly, but it is pepper guys so don’t over do it. I then rest the meat at room temperature for 1 hour before cooking. I then place in a hot pan with plenty of clarified butter. Once I have turned it for the first time, I then spoon the butter over the steak as it cooks. I always finish my steaks in an oven and rest for 5 minutes before serving.
I also have this blend in my pepper grinder as it is great to use whenever pepper is required. This Blend brings to life many simple dishes. Once you taste the Juniper Berries you will be hooked on it for life.
Keep sealed and store in a cool, dry place and it should last for two years.
